One of the most attractive principles of Italian cooking is that with a few simple, yet high quality, ingredients one can create wonderful dishes that are cheap, healthy, and exceptionally flavorful. The simple bruschetta, with an almost limitless variation list, is the epitome of Italian fare and should be incorporated into the repertoire of any home cook serious about Italian cooking.
The key to wonderful bruschetta is to marry 2-3 pristine ingredients with exceptional, toasted, bread. Other variations of bruschetta include:
– diced ripe tomatoes with red onion, basil, salt, dried oregano, and extra virgin olive oil
– salumi
