Here’s a very simply string beans with garlic recipe that pairs very well with any meat or fish. We flavor our string beans with minced garlic but you can also add thinly sliced almonds, tomato, etc.
Ingredients:
- 1 pound of string beans with the ends removed
- Kosher salt
- Extra virgin olive oil
- 3 garlic cloves, minced very well
- Freshly ground black pepper
Process:
Steam the string beans in a large saute pan for 5-10 minutes (Italians like their vegetables more on the well done side). Remove the string beans from the pan and set aside.
Heat the extra virgin olive oil in the same large saute pan over medium heat and cook the minced garlic for 1 to 2 minutes. Add the string beans, Kosher salt and freshly ground black pepper, and mix well. Remove and serve!
This is so simple and delicious. I spent quite a few years in Tuscany and finally got used to eating certain vegetables on the more well done side. I think green beans are actually much better when cooked a little longer. On the other had broccoli and cauliflower, not so much. I guess I know what I’ll be making later on today.

My parents usually add some mint and red wine vinegar. Try it sometime, it really elevates them to the next level.
